Beef Cuts
THE KING OF THE PLATE
Beef is the most versatile protein there is. From a 5-minute steak to a 12-hour braise, understanding the cut is everything.
Ribeye
High Fat · Premium
Cut from ribs 6 through 12, the ribeye is the most marbled steak on the cow. That intramuscular fat melts during cooking, creating an intensely beefy, buttery result that needs almost no seasoning. Bone-in adds even more depth.
Rest on wire rack 8-10 min before slicing. Target: 130°F
Reverse-Sear Ribeye
Ingredients: 2" thick bone-in ribeye · Kosher salt · Black pepper · 1 tbsp neutral oil · 2 tbsp butter
Season steak. Place on wire rack over baking sheet.
Cook in oven at 250°F until internal temp reaches 115°F (45-60 min).
Remove and rest 10 min while heating cast iron until smoking.
Sear 60-90 seconds per side for a perfect crust.
No additional rest needed. Final: 130°F
New York Strip
Medium Fat · Versatile
From the short loin, the strip is leaner than a ribeye with a firmer bite and bold beefy flavor. The fat cap on one side crisps up beautifully. The go-to steakhouse cut for good reason.
Season steak and bring to room temperature (30 min).
Heat grill or cast iron to high.
Cook 3 min per side. Render fat cap on its edge 1 min.
Top with compound butter off heat. Rest 5 min.
Coffee-Rubbed Strip Steak
Rub: 1 tbsp fine ground coffee · 1 tsp smoked paprika · 1 tsp brown sugar · 1/2 tsp garlic powder · Salt & pepper
Mix rub. Press firmly onto both sides. Rest 20 min.
Grill over high heat, 3-4 min per side.
Rest 5 min. The coffee creates a stunning dark crust with subtle bitter-sweet depth.
Chuck Roast
Tough · Best Braised
Cut from the shoulder — well-worked, flavourful, and tough raw. Slow cooking transforms the collagen into silky gelatin. This is the foundation of pot roast and the best beef stew you'll ever eat.
Toss beef in flour, salt, pepper. Sear in batches until browned. Transfer to slow cooker.
Deglaze pan. Add everything to slow cooker.
Cook on LOW 8 hours or HIGH 4-5 hours. Remove bay leaf. Serve with crusty bread.
Brisket
BBQ Classic · Low & Slow
The chest muscle — heavily worked, loaded with collagen, spectacular when cooked properly. Texas BBQ is built on this cut. The flat is leaner; the point is fattier and more forgiving.
Rub spices all over brisket. Refrigerate overnight.
Preheat oven to 275°F. Sear fat-side down 5 min in roasting pan.
Add sliced onion, broth, Worcestershire. Cover tightly with foil.
Roast 5-6 hours. Slice AGAINST the grain.
Texas-Style Smoked Brisket
Rub: Equal parts coarse black pepper and kosher salt. That is the authentic Texas rub. Nothing else needed.
Apply rub generously the night before.
Smoke fat-side up at 225°F over oak wood.
After 6 hours, wrap tightly in butcher paper (not foil).
Continue until 203°F internal. Rest wrapped 1-2 hours minimum before slicing.
Filet Mignon
Most Tender · Lean
From the tenderloin — a muscle that does almost no work. The most tender steak you can buy. Lean and mild in flavour, so the butter baste and any sauce matter more here than they would with a ribeye.
Add butter, thyme, garlic. Baste continuously 2-3 min.
Oven at 400°F for 4-5 min for medium-rare. Rest 5 min. Target: 125°F
Filet with Red Wine Reduction
Sauce: 1 shallot (minced) · 1 cup dry red wine · 1 cup beef stock · 2 tbsp cold butter · Salt
Cook filets as above. Remove and rest.
In same pan, sauté shallot. Add wine, reduce by half. Add stock, reduce until syrupy.
Remove from heat. Swirl in cold butter until glossy. Pour over filets.
Short Ribs
Rich · Best Braised
Loaded with connective tissue and fat. The long braise extracts everything from the bones and creates a sauce that's almost impossibly rich. One of the most rewarding things you can cook on a Sunday afternoon.

Red Wine Braised Short Ribs
Ingredients: 4 bone-in short ribs · Salt & pepper · 2 tbsp oil · 1 onion · 2 carrots · 4 garlic cloves · 2 cups red wine · 2 cups beef stock · Thyme & bay leaves
Sear all sides of ribs until deeply browned. Remove.
Sauté vegetables. Add wine, reduce by half. Add stock and herbs.
Return ribs. Cover and braise at 325°F for 2.5-3 hours.
Strain and reduce braising liquid to sauce. Serve over mashed potatoes.
Korean-Style Galbi
Marinade: 1/2 cup soy sauce · 1/4 cup brown sugar · 1 Asian pear (grated) · 4 garlic cloves · 1 tbsp sesame oil · 1 tbsp ginger · Flanken-cut short ribs
Combine marinade. Coat ribs. Marinate overnight.
Grill over high heat 3-4 min per side, caramelizing the sugars.
Serve with steamed rice and kimchi.
Flank Steak
Lean · Grill Fast
Long, flat cut from the abdominal muscles. Lean, flavourful, budget-friendly. Marinade is key. The absolute rule: always slice thin against the grain or it will be chewy regardless of how well you cook it.

Rest 8 min. Slice thin at 45° angle against the grain. Serve in tacos.
Sirloin Steak
Lean · Budget Friendly
From the rear back, between the short loin and the round. Good beefy flavor, less marbling than a strip or ribeye, and a more affordable price point. Best kept to medium-rare and sliced against the grain.

Grilled Sirloin with Chimichurri
Ingredients: 2 sirloin steaks · Salt & pepper · 1 tbsp oil · Chimichurri (parsley, oregano, garlic, red wine vinegar, olive oil, chili flake)
Season steaks and bring to room temp 30 min.
Grill over high heat, 4-5 min per side for medium-rare.
Rest 5 min, slice against the grain, top with chimichurri.
Tri-Tip
West Coast BBQ Favorite
A triangular roast from the bottom sirloin. Beefy and reasonably tender with a distinct grain that changes direction in the middle — slice each half separately, against its own grain, for the best bite.

Apply rub generously, rest 1 hour.
Sear over high heat 4-5 min per side, then move to indirect heat.

From the diaphragm, long and thin with intense beef flavor and visible loose grain. Cooks in minutes over very high heat. Like flank, must be sliced thin against the grain.

Fajita Skirt Steak
Ingredients: 1.5 lb skirt steak · Lime juice · Garlic · Cumin · Chili powder · Oil · Bell peppers & onion
Marinate steak 1-2 hours in lime, garlic, cumin, oil.
Sear 2-3 min per side over screaming-hot heat.
Rest 5 min, slice thin against the grain.
Sauté peppers and onion, serve together with warm tortillas.
Hanger Steak
Butcher's Cut · Bold
Hangs from the diaphragm near the kidney — historically the cut butchers kept for themselves. Deep, almost livery beefy flavor with a loose grain. One per animal, so it's harder to find but worth seeking out.
Trim the central silverskin/membrane. Season steak.
Sear in hot pan 3-4 min per side for medium-rare. Rest.
In same pan, soften shallots in butter, deglaze with vinegar.
Slice steak against the grain, top with shallots.
Picanha
Brazilian Steakhouse
The top sirloin cap, traditionally cut with a thick fat layer left on and skewered into a C-shape for churrasco. The fat bastes the meat as it slow-roasts over open flame, rendering crisp on the outside.

Ingredients: 2 lb picanha (fat cap on) · Coarse salt only
Cut into thick steaks with the fat cap on each piece, curve into a C and skewer.
Salt generously right before cooking.
Grill over medium-high heat, fat side toward the fire first, rendering slowly.
Rotate until 130°F internal. Rest, then slice against the grain.
Beef Cheeks
Tough · Ultra Rich Braise
Heavily worked muscle, dense with collagen. A long braise turns beef cheeks into something almost custard-soft, with a deep, gelatinous sauce. An underrated cut that punches well above its price.
Season and dredge cheeks in flour. Sear until deeply browned. Remove.
Sauté vegetables, add wine and reduce by half. Add stock and thyme.
Return cheeks, cover, braise at 300°F for 3.5-4 hours until fork-tender.
Strain and reduce sauce, serve over polenta or mash.
Eye of Round
Very Lean · Roast Thin
From the rear leg — extremely lean, with almost no fat or marbling. Best treated like a roast beef for sandwiches: cooked low to medium-rare and sliced paper-thin, never cooked past medium.

Ingredients: 3 lb eye of round · Salt & pepper · Garlic powder · 1 tbsp oil
Season generously, rest 1 hour at room temp.
Sear all sides in hot oil until browned.
Roast at 225°F until internal temp hits 125°F (about 1.5-2 hours).
Rest 20 min, chill, then slice paper-thin against the grain for sandwiches.
Oxtail
Bone-In · Gelatinous Braise
Cross-cut sections of the tail, full of bone, marrow, and connective tissue. A slow braise yields a thick, deeply flavorful, almost sticky sauce — the backbone of Jamaican oxtail stew and Korean kkori-gomtang.
Cover and braise at 300°F (or pressure cook) until tender, 3-4 hours.
Add butter beans in the last 30 min. Serve over rice and peas.
Pork Cuts
THE OTHER RED MEAT
Pork is arguably the most versatile protein in the kitchen. Here are the essential cuts every serious cook should know.
Pork Shoulder (Boston Butt)
Low & Slow Classic
Well-marbled and loaded with collagen. When smoked or slow-roasted, it falls apart effortlessly. This is pulled pork — no other cut comes close for this purpose.

Classic Pulled Pork
Ingredients: 4 lb pork shoulder · 2 tbsp brown sugar · 1 tbsp each: smoked paprika, garlic powder, onion powder, salt · 1 tsp pepper · 1 tsp cayenne · 1/2 cup apple cider vinegar
Mix spices into rub. Coat pork. Refrigerate overnight.
Place in roasting pan with 1/4 cup water. Cover tightly with foil.
Roast at 275°F for 8-9 hours until internal temp hits 205°F.
Rest 30 min. Shred with two forks. Drizzle with vinegar and pan juices.
Score the fat cap deeply. Blend marinade into a paste. Push into every slit.
Marinate 24-48 hours in fridge.
Roast at 325°F for 4-5 hours, then blast at 450°F for 20 min to crisp the skin.
The skin should shatter like crackling. Serve with rice and beans.
Pork Tenderloin
Lean · Fast Cook
The leanest cut on the pig. Cooks fast and dries out fast — a quick sear and oven finish is the method. Wrapping in bacon adds fat and makes it nearly impossible to overcook.
Butterfly the tenderloin (slice lengthwise without cutting through).
Layer with spinach, feta, sun-dried tomatoes, garlic. Roll tightly.
Wrap in overlapping bacon strips. Secure with toothpicks.
Sear all sides. Roast at 400°F for 20-25 min until 145°F.
Pork Ribs
BBQ Staple
Baby backs are leaner and shorter. Spare ribs are larger, fattier, and more flavourful. St. Louis style spares are trimmed flat for even cooking. All three are incredible low and slow.

Oven 3-2-1 Baby Back Ribs
Dry rub: brown sugar · smoked paprika · garlic powder · onion powder · salt · pepper · cayenne. Plus: 1/4 cup apple juice · BBQ sauce
Remove silverskin from back of rack. Apply rub generously.
Bake uncovered on wire rack at 275°F for 3 hours.
Wrap tightly in foil with apple juice. Bake 2 more hours.
Unwrap, brush with BBQ sauce. Bake 1 final hour until caramelized.
Competition-Style Spare Ribs
Glaze: 1/2 cup honey · 1/4 cup apple cider vinegar · 1/4 cup BBQ sauce · 1 tbsp hot sauce
Apply heavy rub. Smoke at 225°F for 3 hours.
Wrap in foil with brown sugar, honey, and butter. Back on heat 2 hours.
Unwrap and glaze heavily. Smoke 1 more hour until glossy and caramelized.
Bones should pull cleanly with slight resistance.
Pork Belly
Rich · Multi-Method
The same cut that becomes bacon when cured and smoked. Fresh pork belly has layers of fat and meat that crisp and melt simultaneously. A staple in Chinese, Korean, and Filipino cooking.

Ingredients: 2 lb pork belly · 1 head garlic · 2 bay leaves · 1 tbsp peppercorns · Salt · Neutral oil for frying
Simmer belly in water with garlic, bay, peppercorns, and salt for 45 min.
Dry completely on a rack in fridge uncovered for 4+ hours.
Score skin in crosshatch. Rub generously with salt.
Deep fry at 375°F for 8-10 min until skin is crackling and golden. Serve with spiced vinegar.
Pork Chops (Loin)
Quick · Versatile
Bone-in or boneless cuts from the loin. Lean and easy to overcook — a quick brine and a hot pan with a butter baste keeps them juicy. Bone-in chops have more flavor and stay moister.

Brined Pan-Seared Pork Chops
Ingredients: 2 bone-in chops (1" thick) · Brine: 1/4 cup salt + 1/4 cup sugar in 4 cups water · 1 tbsp oil · 2 tbsp butter · Thyme & garlic
Brine chops 30-60 min, then pat dry.
Sear in hot pan 3-4 min per side.
Add butter, thyme, garlic, baste 1 min. Rest 5 min. Target: 145°F
Pork Loin Roast
Sunday Roast
A larger boneless or bone-in roast from the same section as chops. Lean, so a quick high-heat roast with a flavorful crust and a rest is the key to avoiding dryness.
Season cutlets, dredge in flour, then egg, then breadcrumbs.
Fry in 1/2" oil at medium-high heat, 2-3 min per side until golden.
Drain on a rack, serve immediately with lemon wedges.
Pork Shank / Hock
Braise · Gelatinous
The lower leg — tough, sinewy, and full of collagen. Slow braising or smoking renders it tender with a sticky, rich texture. A staple of German and Filipino cooking (pata).
Simmer hocks with soy sauce, vinegar, garlic, bay, peppercorns, and onion for 1.5-2 hours until tender.
Optionally deep fry or broil after braising for a crisp skin.
Serve with the reduced braising liquid and rice.

Small, well-worked muscles with great marbling. Braised low and slow they become silky and rich — a favorite in Spanish and Mexican cooking (carrillada, cachete).

Ingredients: 1.5 lb pork cheeks · Salt & pepper · Flour · 1 onion · 2 garlic cloves · 1 cup dry sherry · 1 cup chicken stock · Bay leaf
Season and dredge cheeks, sear until browned. Remove.
Sauté onion and garlic, add sherry and reduce slightly.
Add stock and bay leaf, return cheeks, cover and braise at 300°F for 2.5-3 hours.

The cheek/jaw muscle, very fatty and flavorful. Cured it becomes guanciale, the heart of carbonara; fresh, it renders down beautifully when seared.

Pasta alla Gricia (with Guanciale)
Ingredients: 6 oz guanciale (cubed) · 12 oz pasta · 1 cup pecorino · Black pepper
Render guanciale slowly in a cold pan until crisp and fat is rendered.
Cook pasta, reserving starchy water.
Toss pasta with guanciale and fat, pecorino, and a splash of pasta water until creamy. Finish with black pepper.

From the rear of the loin, leaner and slightly more textured than center-cut loin. A budget-friendly roasting cut that benefits from brining or marinating before cooking.

Slow Cooker Pork Sirloin with Apples
Ingredients: 2.5 lb pork sirloin roast · 2 apples (sliced) · 1 onion · 1/2 cup apple cider · 1 tbsp Dijon · Thyme · Salt & pepper
Season roast, sear all sides until browned.
Place apples and onion in slow cooker, set roast on top.
Add cider, Dijon, thyme. Cook on LOW 6-7 hours until tender. Slice and serve with the apples.
Country-Style Ribs
Meaty · Braise or Smoke
Cut from the shoulder end of the loin, these are meatier and less bony than true ribs — almost like small pork chops. Great braised or smoked low and slow.

BBQ Braised Country-Style Ribs
Ingredients: 3 lb country-style ribs · Dry rub (paprika, brown sugar, garlic powder, salt, pepper) · 1 cup BBQ sauce · 1/2 cup chicken stock
Season ribs with dry rub, sear until browned on all sides.
Place in baking dish, mix BBQ sauce and stock, pour over.
Cover and bake at 300°F for 2-2.5 hours until tender, basting occasionally.
Ground Pork
All-Purpose
Typically ground from shoulder trim, with a good fat ratio for flavor. The base for meatballs, dumplings, sausage, and countless ground-meat dishes across every cuisine.
Mix pork, cabbage, scallions, ginger, soy sauce, and sesame oil.
Fill wrappers, fold and seal.
Steam 8-10 min or pan-fry then steam for pot-sticker style. Serve with soy-vinegar dip.
Pork Trotters (Feet)
Collagen-Rich · Braise
Almost entirely skin, bone, and collagen. A long simmer turns the liquid into a natural, sticky gelatin — essential in Chinese braises, Filipino crispy pata, and rich stocks.

Braised Trotters with Soy & Star Anise
Ingredients: 2 pork trotters, split · Soy sauce · Shaoxing wine · Star anise · Ginger · Brown sugar · Water to cover
Blanch trotters 5 min, rinse.
Combine with soy sauce, wine, star anise, ginger, sugar, and water in a pot.
Simmer covered 2.5-3 hours until very tender and the liquid has thickened.
Pork Neck Bones
Budget · Slow Simmer
Inexpensive, bony, and packed with collagen and marrow. Long simmering produces deeply flavored broths and falling-off-the-bone meat — a Southern comfort food staple.
Season and dredge neck bones in flour, brown in batches.
Sauté onion in same pot, add stock and return bones.
Cover and simmer 2-2.5 hours until meat is tender and gravy has thickened. Serve over rice.
Lamb Cuts
BOLD, DISTINCTIVE, REWARDING
Lamb has a distinct, earthy richness that pairs brilliantly with bold herbs and spices. Here are the cuts worth mastering.
Rack of Lamb
Showstopper
Eight rib chops still connected — arguably the most elegant meat presentation available. The meat is tender, delicate, and cooks quickly. A dinner party centerpiece.
Sear fat-side down in hot pan, 3-4 min. Cool slightly.
Mix breadcrumbs, herbs, garlic, oil into a paste.
Brush fat side with Dijon. Press herb crust on firmly.
Roast at 425°F for 20-25 min. Rest 10 min. Target: 130°F
Pistachio & Mint Crust
Crust: 1/2 cup crushed pistachios · 2 tbsp fresh mint · 1 tbsp parsley · 1 garlic clove · 2 tbsp softened butter · Salt
Blend into paste. Refrigerate 15 min to firm.
Sear rack fat-side down. Coat top with Dijon, then press pistachio crust on.
Roast at 400°F for 18-22 min. Crust should be golden and fragrant.
Leg of Lamb

Bone-in delivers better flavour; boneless is easier to carve. Butterflying and grilling is one of the great outdoor cooking experiences.

Ingredients: 5 lb bone-in leg · 6 garlic cloves (sliced) · 4 rosemary sprigs · Olive oil · Salt & pepper · 1 cup white wine · 1 cup chicken stock
Cut slits all over leg. Push garlic slices and rosemary into each slit.
Rub with oil, salt, pepper. Rest overnight if possible.
Roast at 450°F for 20 min, then 325°F for 1.5-2 hours, basting every 30 min. Rest 20 min. Target: 145°F
Butterflied Grilled Leg
Marinade: 1/4 cup olive oil · 6 garlic cloves · 2 tbsp fresh oregano · 2 tbsp lemon juice · 1 tbsp red wine vinegar · Salt & pepper
Open the leg flat. Score thick parts for even thickness. Apply marinade. Rest 4+ hours.
Grill over high heat, 8-10 min per side depending on thickness.
Rest 10 min. Slice across grain at an angle. Serve with tzatziki.
Lamb Shoulder
Best Slow-Cooked
Fattier and more flavourful than the leg. More connective tissue means it's ideal for slow cooking until it shreds effortlessly. North African spice rubs work brilliantly here.
Rub lamb with ras el hanout and salt. Sear all sides. Remove.
Sauté onion and garlic. Add tomatoes, stock, preserved lemon.
Return lamb, add chickpeas. Cover and braise at 325°F for 3 hours. Finish with cilantro. Serve over couscous.
Lamb Chops
Quick · Elegant
Loin or rib chops are the lamb equivalent of a steak — quick-cooking, tender, and impressive. A cast iron and 5 minutes is all you need.

Seared Chops with Mint Chimichurri
Chimichurri: 1 cup fresh mint · 1/2 cup parsley · 3 garlic cloves · 2 tbsp red wine vinegar · 1/2 cup olive oil · Red pepper flakes · Salt
Blend chimichurri ingredients. Set aside.
Season chops with salt, pepper, garlic powder.
Sear in hot cast iron, 3 min per side for medium-rare.
Rest 4 min. Spoon chimichurri generously over top.
Lamb Shank

The lower leg — heavily worked and full of connective tissue. A long braise turns it meltingly tender while the bone marrow enriches the sauce. One of the great cold-weather dishes.
Season and dredge shanks, sear all sides until browned. Remove.

Ingredients: 1 lb veal scallopini · Salt & pepper · 1/2 cup flour · 3 tbsp butter · 2 tbsp olive oil · 1/2 cup white wine · 1/2 cup chicken stock · Juice of 1 lemon · 2 tbsp capers · Parsley
Pound cutlets to 1/4" thickness. Season and dredge in flour.
Cook in hot oil and 1 tbsp butter, 1.5 min per side. Remove.
Add wine, scrape pan. Add stock, lemon, capers. Simmer 2 min.
Swirl in remaining cold butter. Return veal 30 seconds. Garnish with parsley.
Veal Marsala
Ingredients: 1 lb veal scallopini · Flour · 2 tbsp each butter and oil · 1 cup cremini mushrooms (sliced) · 3/4 cup dry Marsala wine · 1/2 cup chicken stock · 1 tbsp cold butter
Dredge and cook veal as above. Remove.
Sauté mushrooms until golden. Add Marsala and let sizzle.
Add stock. Reduce until saucy. Swirl in butter.
Return veal and coat in sauce. Serve over pasta or polenta.
Osso Buco (Veal Shank)

Cross-cut veal shank with the marrow bone exposed. Braising turns the tough shank silky-tender while the marrow melts into the sauce. One of the all-time great Italian dishes.

Ingredients: 4 veal shanks · Salt & pepper · Flour · Olive oil · 1 onion · 2 carrots · 3 celery stalks · 4 garlic cloves · 1 cup white wine · 1 cup veal/chicken stock · 1 can crushed tomatoes · Gremolata: lemon zest + 2 garlic cloves + 1/4 cup parsley
Tie string around each shank. Season and dredge in flour. Sear 4 min per side. Remove.
Rest 5 min. Target: 145°F Drizzle brown butter and crispy sage over top.
Grilled Veal Chop with Salsa Verde
Salsa Verde: 1 cup flat-leaf parsley · 2 tbsp capers · 2 anchovies · 1 garlic clove · 1 tbsp red wine vinegar · 1/2 cup olive oil
Pulse all salsa verde ingredients until roughly chopped. Season.
Season chops generously. Grill over high heat, 4 min per side for medium-rare.
Rest 5 min. Spoon salsa verde generously over chops. Serve with grilled lemon.
